It is amazing how quickly Spring appears!!
Within days, trees that have lay dormant for months are brimming with brand new bright green foliage..... Rolling out with each ray of sun...... The temperatures are suddenly not as harsh on your skin..... And that log fire that you have craved all through winter now doesn't seem so important.
With spring comes the aisles of corner stores, farmers markets, supermarkets across the country loaded with beautiful ripe Spring fruit! Berries, Watermelon..... Yum...
This has inspired me to share a spring cocktail I came across in a foodie magazine.....
WATERMELON - SAKE MARTINI
Heat a cup each of caster sugar and water, with 1/2 cup of lime juice and two lemongrass stalks over low heat. Stir until the sugar dissolves. Then, bring to the boil for 5 minutes. Cool and then strain. Add 2/3 cup sake and 1/3 cup of the sugar mixture to pureed and strained watermelon juice. Add 1/2 cup ice cubes and blend until smooth. Pour into glasses and top with a slice of lime to serve.
