Winter. Beautiful clear days and cold nights. After warming your bones, there is nothing better to warm the soul than a fresh pot of soup brewing! Our house is currently alive with the rich aroma of my broccoli and spinach soup. I cook from the heart so every recipe is unique.
Here is today's homemade recipe.
One leek -sliced finely
1/2 cup White wine
Knob of butter
Dash of Olive oil
One clove of Australian garlic
Two heads of broccoli
A bunch of fresh English Spinach
One zucchini
Chicken stock to cover veges
Salt and Pepper
Fry leek in butter and oil. Add white wine. Let it evaporate a bit. Add stock and all the remaining ingredients. Boil then simmer for an hour or so. Blend and serve with a dollop of cream or grated sheep's pecorino cheese and a nice crunchy hunk of bread.
